The selection of tea trees and the quality of matcha

Although theoretically any tea tree can be used to make matcha, in order to ensure its smooth and non bitter taste, it is necessary to choose tea trees that have undergone special shading treatment and pick suitable leaves. If untreated tea trees or late harvested leaves are used, the taste of matcha will become bitter and the color will be yellowish or brown.
